This heart-healthy, gluten-free dish takes salmon to the next level! The pistachio and walnut crust adds a magical crunch and savoriness to this entire dish.
HAM INGREDIENTS:
2.5-3 pound spiral sliced ham
1 blood orange thinly sliced
6-8 garlic cloves thinly sliced
4-6 sprig each or fresh oregano, rosemary & thyme
Kosher salt & freshly ground pepper
GLAZE INGREDIENTS:
½ cup brown sugar
½ cup pure maple syrup
1 blood orange juiced
1 blood orange thinly sliced
Sea salt and black pepper to taste
Whole Cardamom (1/2 tsp.)
1-2 star anise pods

Chef tip: How to choose the best ham in the grocery store? Check the label, look for hams with no added water or juices. The label should just read “ham” — not Ham, water added or Ham with natural juices. And stay away from hams in cans under all circumstances!!!
