Airfryer Ham with Herbs, Garlic Chip & Blood Orange

2.5-3 pound spiral sliced ham

1 blood orange thinly sliced

6-8 garlic cloves thinly sliced

4-6 sprig each or fresh oregano, rosemary & thyme

Kosher salt & freshly ground pepper



½ cup brown sugar

½ cup pure maple syrup

1 blood orange juiced

1 blood orange thinly sliced

Sea salt and black pepper to taste

Whole Cardamom (1/2 tsp.)

1-2 star anise pods



  1. Combine sugar, maple syrup, blood orange juice, star anise, and cardamon in pan on low heat. Stir until sugar is dissolved, set aside, and keep covered so spices steep. Remove spices before brushing glaze.


  1. Line the air fryer basket with 2 pieces of long, overlapping foil sheets. Lay the ham on top of the foil and then brush about 1/3 of the glaze over the ham. Place about half of garlic and half of herbs, in between slices of ham. Close the foil over the ham and wrap tightly.
  2. Air fry at 300 for 15-20 minutes. Open the air fryer basket, carefully open the foil, and then brush the ham with more glaze (make sure to reserve some glaze for finishing & serving). Close the foil tightly, and air fry again at 300 for 15-20 minutes.
  3. After cooking for about 40 minutes, open up the foil and push foil down around the edges of the ham to hold in the juices and keeps the ham from drying out.
  4. Place slices of blood orange in between ham. Scatter remainder garlic slices above ham and brush with final glaze. Air fry at 400 for 5 minutes, until caramelized .
  5. Remove ham and place on serving platter cover and let rest for a few minutes before serving.


Chef tip: How to choose the best ham in the grocery store? Check the label, look for hams with no added water or juices. The label should just read “ham” — not Ham, water added or Ham with natural juices. And stay away from hams in cans under all circumstances!!!
