2 cups low sodium beef broth

½ cup onion finely chopped

1 clove garlic minced

1 tbsp fresh thyme finely chopped

1 cup gourmet blend mushrooms coarsely chopped

¾ lb. of short rib cut into ¼ inch pieces

¾ cup cannellini beans drained and rinsed

¾ cup grated parmesan Reggiano

Garnish EVOO, parmesan shavings


  1. Place all ingredients into soup maker, stir ingredients, close lid selects chunky program and then start.
  2. When soup is ready, open lid, serve into bowls and garnish with a few fresh raw leaves of spinach. Stir into soup and drizzle with EVOO and shavings of parmesan


Chef Tip:

*For a more intense, deep flavor:

In a medium sauce pan, over medium heat, sauté garlic and onions for a couple of minutes. Then add meat, mushrooms, thyme, salt and pepper, and let it cook for a few more minutes on medium-low heat, stirring frequently. Then add mixture to soup maker and follow the rest of instructions above.
