Airfryer Spicy Pork Loin with Apples

Pork loin (fat on top if you want crunchy top)

1 tablespoon EVOO

5-7 large cloves of garlic

4-6 sprigs of rosemary

¼ cup EVOO

Salt and pepper (to your liking )

One large apple, sliced (I used honey crisp)

Tablespoon of Calabrian chili (or red chili pepper flakes)

One medium onion coarsely chopped

Assorted squash sliced in 1/4 inch wedges

1 1/2 cup small potatoes

  1. In small food processor place garlic, rosemary, EVOO, chili, salt and pepper. Pulse into a paste.
  2. Score the fat on top of pork loin and cut divots in meat . Rub paste all over meat and shove into divots.
  3. Cut evenly spaced slits on top of the Pork Loin into fat (width wise), just deep enough to place in apple slices, not deep enough to cut through entire depth. Stuff each with apple slice.
  4. Turn air fryer to 400.
  5. Place meat in rack.
  6. Place potatoes, onions, and squash around meat. Drizzle with EVOO, salt and pepper
  7. Cook for about 40 minutes.
  8. Then lower the temperature to 325 and roast until 140 internally (measured with a meat thermometer). Remove and cover with foil for 15 minutes.
